The 2019 Pinot Noir Rosé is a bright and cheerful pale rhubarb and pink salmon colour. The aromatics steer you towards red licorice, raspberry, cranberry, pomegranate and black currant, with a delicate hint of nectarine.
Lively and intense flavours of pomegranate and rhubarb explode in your mouth! While the palate is quite lively and fresh, it is also delicately complex with a soft roundness and weighty structure, reflective of the Pinot Noir grapes we used to make this wine.
Grapes were harvested from blocks 22, 23, 25 (The Orchard Blocks) and block 34. The Orchard Blocks have a lot of clay in the soils and tend to remain cooler, which helps preserve the light berry and fruit characters, but also imparts a smoothness to wine.
The grapes were whole bunch pressed, half with 18 hours skin contact and half with only 5 hours skin contact, with the goal of only delicate colour extraction. The juice was cold settled, then racked and fermented (to dryness) like a white wine, preserving the natural Pinot Noir flavours.
The food pairing ideas are endless! Anything with tomato or pesto based based sauces, such as margherita pizza, lobster & pistou pizza, pulled pork pizza.
Some suggestions to help you to create your own delicious dish: salmon, prosciutto, pork chops, star anise, tarragon-infused butter, nuts, asparagus or szechuan.
